Slow mornings are made for perfect pancakes - especially when they’re topped with something a little indulgent. To celebrate Pancake Day, we teamed up with stylist and lifestyle influencer Antonia Sanchez-Toomey to create an effortless yet luxurious breakfast at home.

Antonia’s Simple Pancake Recipe
Antonia keeps her pancake recipe beautifully simple - because, as she says: the real magic is always in the toppings.
For this version, she chose; Greek yoghurt, cherry compote, pistachios and maple syrup - a combination that’s rich, fresh and full of flavour. If you prefer something slightly more savoury, ricotta works just as well in place of yoghurt.
This is Antonia’s go-to pancake recipe - perfect for Pancake Day, slow weekends, or any morning that calls for comfort food.
Ingredients
- 200g self-raising flour
- 1½ tsp baking powder
- 1 tbsp golden caster sugar
- 3 large eggs
- 25g butter, melted (plus extra for cooking)
- 200ml milk
- Vegetable oil, for cooking
Method
- Melt the butter and set aside to cool slightly.
- Add all the dry ingredients to a large mixing bowl.
- Make a well in the centre and add the eggs, milk and melted butter.
- Whisk for a few minutes until the batter is smooth and free of lumps.
- Heat a pan with a little butter or oil and cook the pancakes until golden on each side.
- Serve warm with your favourite toppings.
